Fluffy lemon yogurt loaf cake (an easy homemade dessert)

Ingredients (one standard loaf tin)

A light loaf cake with a bright lemon flavour and a fine texture from the yogurt – a simple dessert that goes perfectly with coffee or tea.

  • 3 mountain eggs

  • 180 g of sugar

  • 200 g yogurt (full-fat or medium-fat)

  • 80 ml oil

  • 250 g flour

  • 1 sachet of baking powder

  • Grated zest from 1 lemon

  • 1 tablespoon of vanilla extract

Steps

Beat the eggs with the sugar

Mix the eggs with the sugar until they become slightly light in color and foamy.

Incorporate the liquid ingredients

Add the yogurt, oil, vanilla and lemon zest, mixing gently.

Add the dry ingredients

Sift the flour together with the baking powder and gradually incorporate them, mixing with a spatula.

Bake the cake

Pour the mixture into a lined cake tin and bake for 35–40 minutes at 170–175 °C (test with a toothpick).

Let it cool

Remove the cake from the pan after a few minutes and let it cool on a wire rack. You can dust it with powdered sugar or glaze it with lemon.

tips & tricks

For a quick glaze: mix lemon juice with powdered sugar until you get a thick cream and pour it over the cooled cake.

You can also add blueberries or chocolate chips to the dough for variety.
